Vineyard and terroir
The 3 ha vineyard faces east, northeast and south and lies 500–600 metres above sea level. The relatively high altitude lets the grapes ripen fully while retaining their acidity and characteristic varietal aromas. The sandy soils contain high levels of limestone and dolomite. The site was originally planted with a local red variety, which Peter Dipoli replaced entirely with Sauvignon Blanc between 1988 and 1991.
Vinification
The grapes are harvested in the second half of September. Fermentation lasts 10 days in large acacia barrels at a controlled 22 °C.
Ageing
The wine matures on its lees in barrels until June of the following year, with bâtonnage every 10 days during the first 3 months. After bottling it is aged for a year in the winery's cellars.

Label / history
"Voglar" is the old name of the area where this historic vineyard is located; "fogolar" means "fireplace" in the local Italian dialect.
