Vineyard and terroir

The Gallina vineyard is situated on a hill whose character is reflected in the wine’s aromas, flavours and structure.

Vinification

The wine macerates on the skins for 30 days to extract colour, aroma and tannin. It ferments spontaneously in oak vats with wild yeasts, contributing complexity, individuality and a strong sense of place.

Ageing

Ageing takes place in large botti for 18–24 months, softening the tannins and balancing the flavours while limiting oxygen contact compared with smaller barrels. The wine then rests in bottle for 6–12 months, becoming rounder and more settled as its mature bouquet begins to develop.

Tasting profile

Powerful yet elegant, the wine is warm, serious and deep, with dense, sweet tannins and a full structure. Its flavours are balanced and retain freshness.

Serving and pairing

Suggested pairings include mature Parmesan, truffle and roasted meat.

Vintage notes

The 2020 growing season in Italy was warmer than usual and brought an early harvest. Warm days and cool evenings allowed the Nebbiolo grapes to ripen fully, producing wines with balanced flavours, refreshing aromas and good ageing potential.
