90–95% Malvasia, with Grechetto making up the balance.
Vinification
The grapes dry for approximately four months on reed mats in an attic. They are pressed at the end of January using traditional manual presses.
Ageing
The must is transferred to small casks called caratelli together with the madre, the culture traditionally preserved by each estate. Ageing lasts for a minimum of seven years.
Technical data
Production is approximately 2,000 bottles.
Tasting profile
Deep, dense amber in appearance, with golden nuances and limited transparency. The intense bouquet combines honey and vanilla with an underlying caramel character. Sweet, velvety, soft and dense on the palate, it achieves balance through the interplay of sugar, acidity and volatile aromas.
