Vineyard and terroir
The grapes come from the hillsides of Acquaviva di Montepulciano, in the province of Siena.

Trebbiano Toscano and Malvasia Bianca.
Vinification
The bunches are harvested by hand and laid on mats to dry. Fattoria del Cerro uses the spacious attic of Podere Argiano for this stage; its ventilation and humidity allow the grapes to remain sound through January, when they are pressed. Once the required concentration has been reached, the resulting must is transferred to small oak barrels for alcoholic fermentation.
Ageing
The wine remains in the small oak barrels for three years.
Tasting profile
Deep amber in colour, with aromas of dried fruit, apricot and fig. The palate is intense, rich, dense and sweet, ending with persistent freshness and a spicy finish.
Serving and pairing
Pair with cakes and biscuits, mature goat’s cheese, blue cheese or foie gras.
Label / history
Golden bunches drying on mats through autumn and winter form a traditional image of Tuscan winemaking. Fattoria del Cerro continues this method for its Vinsanto, allowing the fruit to dry naturally before pressing and prolonged maturation in wood.
