Grapes
Each variety has its own role in the blend: Barbera contributes juicy fruit, Nebbiolo elegance, complexity and aroma, and Cabernet Sauvignon a firm structure.
Vinification
The grapes are harvested by hand. At the winery the bunches are destemmed and gently pressed, then fermented in stainless-steel tanks at 26 °C. The wine stays in tank for 12–15 days, developing deeper aromas and pronounced fruit character. Malolactic fermentation at 20 °C softens the natural acidity.
Ageing
The wine is aged for three years in large barrels, which make it rounder and more complex.
Tasting profile
Juicy fruit, elegance and firm structure, with pronounced fruit character and deep aromas. The texture is velvety, and the finish is rich and harmonious. The winery aims for balance, directness, depth and refinement.
Label / history
Cabane was the first wine in the Cantine Povero range to show an international character while expressing the terroir of the Langhe.
