Vineyard and terroir
The fruit comes from the approximately 10 ha Roncicone vineyard, at 320 m above sea level. Its south-eastern exposure gives the grapes gentle morning sun and supports slow, even ripening. The soils consist of Pliocene marine sediments, with pockets of sand and stones smoothed by waves and wind over deeper clay layers. The underlying geological formation is known as Depositi Marini.
Vinification
The grapes are harvested and sorted entirely by hand, transported to the winery in 200 kg containers and destemmed. Only free-run juice is used. Fermentation takes place with selected yeasts in 100 hl stainless-steel tanks at 24–27 °C. Regular punch-downs extract colour and tannins. Alcoholic fermentation and skin maceration last approximately 14–16 days.
Ageing
The wine matures for 18 months in 500 L tonneaux, comprising 30% new oak and 70% second-use barrels. This preserves its refined fruit character while introducing gentle oak notes.
