Vineyard and terroir
Il Riccio interprets the Panzano in Chianti territory through Cabernet Franc. The estate vineyard at Fattoria di Rignana lies at 350 m above sea level, faces southeast and is rooted in shale. It is planted at 5,000 vines per hectare, trained to Guyot and farmed organically.
Grapes
100% Cabernet Franc.
Vinification
The grapes are picked by hand from 28 September. Vinification lasts 21 days in stainless-steel vats at a controlled temperature no higher than 27°C. Bottling takes place in May.
Technical data
Alcohol: 15%. Production comprises 3,800 bottles of 750 mL and 100 magnums of 1.5 L.
Tasting profile
Intense violet in colour, with aromas of red fruit and an elegant expression of its Panzano origins.
Serving and pairing
Suitable for all kinds of meat, particularly red meat, as well as mushroom dishes such as porcini.
