Vineyard and terroir
The vines grow on limestone and clay soils on the Salento Peninsula, at an altitude of 50–80 metres.
Vinification
The grapes are harvested by hand and by machine in the second week of September. Maceration takes place in steel vats for 7–8 days at 25 °C, with frequent stirring of the must.
Ageing
The wine rests for nine months in glass-lined cement vats.
