Vineyard and terroir
The fruit grows on rocky hillside plots north of Bari, including the Murgia hills in the Castel del Monte area, at 250–300 metres above sea level. Yields do not exceed 90–100 quintals per hectare.
Grapes
The grapes have very thin skins, uneven ripening within each bunch and a high juice content. Their particularly juicy berries yield abundant free-run juice and require very little pressing.
Vinification
The grapes are harvested by hand and machine during the last week of September. After gentle pressing, the must remains in contact with the skins for 16–18 hours. Fermentation lasts 9–10 days in stainless-steel tanks at a controlled temperature of 18 °C.
Ageing
The wine matures for 3–4 months in glass-lined cement vats.
