Vineyard and terroir
The vines were planted by the Rivetto family in 1943.
Vinification
The grapes are harvested by hand, then gently crushed and destemmed. They macerate on the skins for two days, followed by a 10-day fermentation in temperature-controlled vats at 30 °C. The wine is clarified with egg white.
Ageing
The wine ages for 18 months in third- and fourth-use Slavonian and French oak barrels, followed by about six months in bottle.
