Vineyard and terroir
The grapes come from several vineyard sites in Palazzo, Cima Caprioli and Sottobosco. The vineyards face northwest and northeast, helping to retain bright acidity and refined aromas. The vines average 25 years of age and grow in well-drained, fertile moraine soils shaped by ancient waterways. The medium-textured soils are rich in organic matter and include a sandier component.
Vinification
The grapes are harvested by hand in August into small crates. The bunches are chilled and gently pressed, after which the must ferments in stainless-steel tanks at 13–14 °C; a portion is vinified in French oak barrels. Fruit from each vineyard site is vinified separately. In May, liqueur de tirage made from cultured yeast and organically grown cane sugar is added to initiate secondary fermentation in bottle.
Ageing
The wine matures on its lees for at least 36 months. Following disgorgement and the addition of dosage at 3.5 g/L, it rests in the cellar for at least another six months.
Tasting profile
Spring wildflowers and delicate green fruit are joined by refined aromas, bright acidity, fine bubbles and an inviting creaminess. The texture has distinctive weight while remaining harmonious.
