Vineyard and terroir
The vineyards lie on steep hills in Central Tuscany at 430 metres above sea level. Calcareous sandstone, marl and calcareous flysch are mixed with clay. The climate is temperate Mediterranean and regularly influenced by sea breezes.
Grapes
70% Sangiovese, 20% Merlot, 5% Cabernet Sauvignon and 5% Syrah.
Vinification
During harvest, the healthiest and ripest grapes are picked in advance, and part of these bunches dries on racks for four to five weeks. After pressing, the concentrated must is added to wine that has completed its first fermentation and consumed its sugars, triggering a second fermentation in the traditional Governo method.
Ageing
Five months in French wood.
Tasting profile
Deep ruby red, with sour-cherry and bramble aromas. The palate is supple and lithe, filled with perfumed fruit and underpinned by a mineral vein. Full-bodied, rich and creamy, it carries bold tannins into a long, lightly spiced finish.
Serving and pairing
Serve at 18°C. Pair with traditional Tuscan dishes, bistecca alla Fiorentina or pasta with meatballs. Its freshness and versatile character also suit service throughout a meal.
