Vineyard and terroir

Teatro is Salicutti’s smallest cru, covering 0.7 ha. The vineyard opens southward like an antique amphitheatre and lies at approximately 500 m. Its Sangiovese vines were planted in 1994 and are grafted onto SO4 rootstock. The relatively cool microclimate shapes a wine defined by ethereality, intensity, complexity and persistence.

Vinification

For the 2017 vintage, fermentation took place in temperature-controlled stainless steel at 30 °C without selected yeasts. Maceration lasted 20–40 days, followed by pressing of the marc in a traditional hydraulic basket press. Malolactic fermentation was completed.

Ageing

The 2017 spent three years in a 21 hl Mittelberger wooden cask and 24 months in bottle. It was neither fined nor filtered.

Technical data

The 2017 yielded 32 hl/ha. Production comprised 2,846 bottles of 750 ml and 110 magnums. Alcohol was 14.14%, total acidity 5.5 g/L, net volatile acidity 0.77 g/L and net dry extract 26 g/L. Total and free sulphur dioxide were 55 and 20 mg/L respectively.

Tasting profile

An ethereal yet intense Brunello, combining essential aromas with concentrated fragrance and a persistent finish.

Vintage notes

In 2016, fermentation was in stainless steel at 28 °C, with 25 days of maceration. The wine matured for three years in 10 and 20 hl oak casks and 12 months in bottle. Yield was 21 hl/ha, production was 1,760 bottles and 120 magnums, and alcohol reached 14.90%. The published 2015 entry carries the same production, vinification, ageing and analytical figures as 2016.
