Vineyard and terroir
The Rosso is made exclusively from vineyards classified for Brunello production. Vineyard proportions vary by vintage. The latest published vintage, 2020, combines 70% Sorgente, 15% Piaggione and 15% Teatro fruit. Sorgente has historically supplied most of the Rosso; its later-ripening, stony galestro soils tend to retain freshness and produce slightly lower alcohol.
Grapes
100% Sangiovese.
Vinification
The 2020 fermented in cement at 28 °C without selected yeasts. Maceration lasted 35 days, after which the marc was hydraulically pressed. Malolactic fermentation was completed.
Ageing
The 2020 matured for 24 months in a 10 hl Mittelberger wooden cask and for 12 months in bottle. It underwent neither fining nor filtration.
Technical data
The 2020 yield was 40 hl/ha. Production comprised 3,280 bottles of 750 ml and 360 magnums. Alcohol was 14.35%, total acidity 5.2 g/L, net volatile acidity 0.62 g/L and net dry extract 28.5 g/L. Total sulphur dioxide was 28 mg/L and free sulphur dioxide 15 mg/L.
Tasting profile
The available tasting description for 2016 presents a medium-intensity ruby wine with an intense fruit profile of red berries, cherry, redcurrant and apple, accompanied by caramel and a light woody note. The palate is fresh, soft and fruity, with sweet, integrated tannins and a long, persistent finish.
Vintage notes
The source vineyards and cellar regimen have changed over time. In 2018 and 2017, the fruit came from Sorgente and Piaggione; fermentation was in stainless steel at 28 °C with 12 days of maceration, followed by 18 months in 5 hl tonneaux and 10 hl oak casks and six months in bottle. In 2016 and 2015, only Sorgente was identified; fermentation reached a maximum of 30 °C, maceration lasted 20 days, and ageing comprised 18 months in 5 hl Allier vessels plus six months in bottle.
Label / history
The label depicts the view across the “Cosmo di Salicutti” as it has existed since 2017, with the house, cellar and farm at the centre of gardens, fields, forest and enclosed vineyards.
