Vineyard and terroir

Primitivo comes from bush vines at least 60 years old in the Valle del Sessantanni, an approximately 40-hectare area between San Marzano and Sava in the province of Taranto. This is a warm, very dry site with pronounced day-to-night temperature variation. The fine-textured residual terra rossa lies over limestone with occasional rocky outcrops and owes its colour to abundant iron oxides. Planting density is 5,000 vines per hectare.

Grapes

Primitivo.

Vinification

The slightly overripe grapes are harvested by hand in mid-September, destemmed and crushed. A 24–48-hour cold soak at 8°C precedes temperature-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days at 24–26°C. The wine is then drawn off using gentle presses.

Ageing

Malolactic fermentation takes place in stainless steel, followed by 12 months in French and American oak barriques.

Technical data

Alcohol: 14.5% vol. Special formats include 1.5 L, 3 L and 6 L.

Tasting profile

Deep, elegant ruby red. The broad, complex nose combines plum and cherry preserve with light spice and tobacco. Full-bodied and supple, with fine tannins and a finish recalling cocoa, coffee and vanilla.

Serving and pairing

Serve at 18°C with substantial first courses, red meat or game.
