Vineyard and terroir
The Dolcetto grapes come from the Langhe.
Grapes
100% Dolcetto, a native variety of lower Piedmont. Despite the sweetness of its fruit, it produces a dry, fresh and approachable wine.
Vinification
The grapes are harvested manually with selection, then crushed and destemmed. Fermentation takes place in stainless-steel tanks at a controlled temperature. The wine macerates on the skins, with the must pumped over the cap daily.
Ageing
Refined in stainless-steel tanks.
Tasting profile
Soft and medium-structured, with a clear aroma of ripe berries and a balanced palate.
Serving and pairing
Pair with vitello tonnato, boiled meats, egg pasta or cheese. Cellar life is approximately two years.

Dolcetto is presented as an everyday Piedmontese wine because its simplicity, balance and versatility at the table suit a broad range of dishes and convivial occasions.
