Vineyard and terroir

The fruit comes from vineyards in Peschiera del Garda, planted at an average elevation of 80 metres on clay soils. The vines average 25 years of age and are trained to the spur-pruned cordon system, with six to eight buds retained per plant. Yield is 65 quintals per hectare (6.5 tonnes per hectare).

Grapes

65% Cabernet Sauvignon and 35% Cabernet Franc. The Bordeaux-style blend revives the area's lesser-known tradition of cultivating red varieties in a territory now closely associated with Lugana and white wine.

Vinification

The grapes are picked by hand into crates during the third ten days of September. Vinification takes place in stainless steel, with frequent submersion of the cap to draw out aroma and structure. Malolactic fermentation precedes maturation.

Ageing

Approximately 18 months in French-oak barriques.

Tasting profile

Intense ruby red with violet reflections. The enveloping, concentrated aroma combines fresh blackcurrant, raspberry and blackberry with liquorice and black-pepper nuances. The palate is savoury, full-bodied and harmonious, balancing structure with an approachable texture. Its overall style is fresh, poised and enveloping, combining elegance with character.

Serving and pairing

Serve at 18–20°C. Pair with wild boar, venison or roe deer, grilled meats such as rib steak or bistecca alla Fiorentina, and mature cheeses with strong, complex flavours.

Evaluna is a red wine born in a territory celebrated for Lugana. It pays tribute to the area's historic red-wine tradition, when Cabernet Sauvignon and Cabernet Franc were cultivated locally. Its Bordeaux-inspired composition is interpreted through freshness, balance and finesse.
