Vineyard and terroir

The grapes come from the Santa Cristina estate in Peschiera del Garda, on the southern shore of Lake Garda. The south-facing vineyard lies at an average elevation of 80 m above sea level and has Cretaceous-clay soil. The vines average 30 years of age and are cordon-trained with spur pruning, carrying five to six buds per plant. Yield is 80 quintals per hectare (8,000 kg/ha).

100% Cabernet Sauvignon.

Vinification

Harvest takes place from late September into early October. Fermentation lasts approximately three weeks in stainless-steel tanks. Frequent pump-overs promote extraction from the grape skins.

Ageing

The wine matures for 15–18 months in a combination of new and used barriques. After racking, it rests for a further 2–3 months in stainless-steel tanks. It is then bottled and receives another 5–6 months of maturation before release.

Tasting profile

Deep, dense ruby to vivid cherry red, with garnet nuances. The bouquet is intense, enveloping, complex and persistent, combining ripe forest fruit, sour cherry, ripe red fruit and jam with black pepper, sweet tobacco, vanilla and light toast. Balsamic tones and a gentle varietal herbal nuance provide the background.

The palate is dry, full-bodied, structured and enveloping. Soft but distinct tannins and good freshness balance the ripe fruit, toasted and spicy notes. The finish is long, with balsamic and subtly bitter echoes. Its harmonious tannic framework supports extended ageing.

Serving and pairing

Serve at 18°C. Pair with game, grilled meats or aged cheeses.
