Vineyard and terroir
The vineyards lie at 180 m above sea level on loamy-clay soils with tuff and volcanic deposits. The vines are 30 years old and trained with the Guyot system, planted at 4000–8000 plants per hectare. The text credits this terroir, together with careful winemaking, for the wine's fresh character and expressive acidity.
Vinification
The grapes are harvested by hand into bins and gently pressed in a pneumatic press under nitrogen. The must ferments in stainless steel tanks at low temperatures with selected yeasts. Bâtonnage is carried out in the same tanks with special mixers and continues until March. After physical and cold stabilisation the wine stays in stainless steel at low temperatures until bottling, which preserves its freshness and lively character.
