Vineyard and terroir
The grapes are grown on the Sassoregale estate in the Maremma microzone.
Vinification
The grapes are harvested between 10 and 30 September. They undergo gentle skin maceration, controlled-temperature fermentation and malolactic fermentation.
Ageing
The wine matures in small oak barrels.
Serving and pairing
Pair with roast red meats, aged cured meats and traditional Tuscan cheeses such as Pecorino.
