Vineyard and terroir
The grapes are selected from the sunniest, most open sites.
Vinification
Before fermentation, the grapes are dried on straw mats for 120 days. During this period they lose 30% of their water, concentrating the juice and giving the wine a richer flavour.
Ageing
The wine ages for more than one year in oak barrels in centuries-old vaulted cellars.
Tasting profile
The aroma and flavour are intense. The palate is tannic and complex, yet harmonious and well balanced.
