Vineyard and terroir
The Carricante comes from the Sciaranuova vineyard at Castiglione di Sicilia, on Etna, at 850 metres above sea level. The site has black volcanic soil formed from lava sands, rich in minerals and containing abundant coarse material. Woodland and relatively recent lava flows surround the vineyard.
The vines are trained on espalier systems, using both spurred-cordon and Guyot pruning. Cultivation follows organic-farming criteria and SOStain® protocols. Spontaneous vegetation is retained as ground cover to add organic matter and encourage soil microfauna. Vine health is managed with minimal quantities of sulphur and copper, while useful insects, mating disruption, zeolite, kaolin and plant extracts are used to discourage pests and support the vines.
Grapes
100% Carricante. The grapes are picked slightly earlier than usual to retain the freshness required for this Metodo Classico sparkling wine. The work is performed manually.
Tasting profile
The bouquet combines restrained floral notes with citrus fruit and a pronounced mineral character. The fine, persistent effervescence supports a soft palate showing delicate citrus and passion-fruit flavours. Mediterranean scrub aromas mark the rich finish.
Label / history
First produced in 2010, Brut Metodo Classico was conceived as a traditional-method sparkling expression of Carricante grown in Etna's black volcanic terrain.
