Vineyard and terroir
The grapes are grown in Veneto on vines averaging 20 years of age.
Vinification
The grapes are harvested by hand during the first half of September, sorted and fermented in stainless-steel tanks. The Pinot Noir undergoes malolactic fermentation.
Ageing
The Pinot Noir matures for one year in old oak barrels. The wine then rests in bottle for a further four to six months.
Label / history
Bollicine Rosé has been produced since 2004, with annual production of approximately 30,000 bottles.
The estate traces its history to the Benedictine monastery Abazia di Nervesa, founded near Nervesa della Battaglia in the 11th century. Its monks cultivated grapes and made wine, developing a large estate that survived until its destruction during the First World War in 1918. Francesco Serafini and Antonello Vidotto began reviving the former monastic estate in 1986. Using historical documents and maps, they set out to reconstruct its period landscape, architecture and vineyards. They are also developing and selecting local vines to restore the area’s genetic heritage, an ongoing process. The winery uses exclusively organic winemaking methods.
