Vineyard and terroir
The grapes come from vineyards in the Treviso region, near Nervesa della Battaglia. The estate farms organically.
Vinification
The grapes are harvested by hand at optimal ripeness in the second half of September and carefully sorted. The Sauvignon Blanc is vinified in stainless steel tanks, while some of the Pinot Blanc is vinified in oak barriques.
Ageing
After fermentation the wine rests on its lees in neutral vessels until the next harvest.
Serving and pairing
Suggested with shrimp risotto, pasta with pesto, fried fish and grilled asparagus.
Label / history
Phigaia Il Bianco is the white counterpart of Serafini & Vidotto's red Phigaia. The estate revives the Benedictine monastery of Abazia di Nervesa, founded in the 11th century near Nervesa della Battaglia. The monks grew grapes and made wine there until the estate was destroyed in 1918, during the First World War. In 1986 two friends, Francesco Serafini and Antonello Vidotto, set out to revive it. Using old documents and maps, they have been recreating the historical landscape, both the architecture and the vineyards. They also work to restore the area's genetic heritage by developing and selecting local grapevines, a process that continues today.
