Vineyard and terroir
The Sangiovese is grown without chemicals, on vines aged 15–25 years. All vineyard work, including harvesting, is done by hand. A recently planted, high-density vineyard of 10,000 vines per hectare produces smaller, riper berries.
Grapes
In the 2022 vintage, which was the first Rosso di Montalcino to include grapes from the recently planted high-density vineyard, that parcel makes up around 5–10% of the wine. Its berries give the wine a distinctive structure.
Vinification
The grapes are sorted by hand on special sorting tables, both before and after destemming. Fermentation takes place in stainless steel tanks at a controlled temperature. The wine is bottled without filtration.
Ageing
The wine ages for 12 months in 225-litre French oak barriques, then continues to age in bottle.
Tasting profile
Modern, refined, full-bodied and richly flavoured, with plenty of tannins.
Serving and pairing
The producer recommends decanting before serving. Because the wine is unfiltered, a natural sediment may occasionally form in the bottle.
Label / history
The 2022 was the first Rosso di Montalcino to include grapes from the new high-density parcel. The lack of filtration reflects Siro Pacenti's winemaking philosophy.
