Vineyard and terroir
The Glera is grown in the winery’s vineyards in the province of Treviso, on soils containing volcanic rock that gives the grapes their distinctive character.
Vinification
The grapes are harvested by hand in the second half of September and gently pressed at the winery. Fermentation proceeds very slowly in temperature-controlled stainless-steel tanks with selected yeasts. A sharp reduction in temperature stops fermentation, retaining a small amount of carbon dioxide and producing a gentle fizz. Bottle pressure ranges from 1 to 2.5 atmospheres after bottling.
