Vineyard and terroir
The grapes grow in the winery’s vineyards in the province of Treviso, on soils containing volcanic rock that gives the fruit its distinctive character.
Vinification
The grapes are harvested by hand in the second half of September and gently pressed at the winery. Fermentation proceeds very slowly in stainless-steel tanks at a controlled temperature with selected yeasts, followed by filtration. The second fermentation takes place in pressure tanks.
