Vineyard and terroir
The fruit comes from the Montesommo vineyard, planted in 1970.
Vinification
Harvest takes place in late October. Maceration is extended, following tradition, to draw out the valuable compounds in the grape skins. Fermentation uses wild yeasts and takes up to 30 days in steel tanks at room temperature, with pump-overs to help extract the aromas. The wine then settles naturally. It is neither filtered nor fined.
Ageing
About 24 months in Slavonian oak barrels, which shape its spicy aroma and structure. A further 24 months in bottle before release lets the wine find its balance.
Tasting profile
Elegant and expressive, unfiltered and a little wild in character, with a spicy aroma and structure shaped by the oak.
Serving and pairing
Decanting is recommended before serving, since the wine is unfiltered and unfined. It suits meat, especially game.
