Vineyard and terroir
The grapes ripen on the high hills of Valpolicella Classico, where sun and wind create a distinctive microclimate. The vineyards lie on the slopes of Cavalo di Fumane, on soils with an alluvial layer. The vines are 15–25 years old and are trained with the Guyot and double pergola systems.
Vinification
The grapes are harvested at ideal ripeness, destemmed and gently crushed. Fermentation takes place at a carefully controlled temperature to preserve freshness and expressive character. Malolactic fermentation follows.
Ageing
The wine ages for 6 months in French oak barrels, then a further six months in bottle.
Tasting profile
Young, the wine has a bright fruit bouquet and a lively taste. The feel is soft and balanced, with a velvety finish. After 4–5 years of ageing it gains depth, richness and subtle nuances.
