Vineyard and terroir
The grapes come from organic vineyards at Cavalo di Fumane, 500 metres above sea level, on southeast-facing slopes. The soils are varied, with an alluvial layer. The vines are 15 to 25 years old.
Vinification
The grapes are picked by hand. Harvest begins on the plains in mid-September and moves to the hills at the end of the month. After destemming, the grapes are pressed and fermented on their skins at 22–23 °C.
Ageing
The wine rests for 3–4 months in neutral steel tanks, then 2–3 months in bottle.
Tasting profile
Bright, fresh and fruity, light and warm in character. Balance, softness and fresh fruit character develop during the rest in tank and bottle.
Label / history
The text cites historical admirers of Valpolicella: Emperor Augustus is said to have considered it his favourite drink, and King Theodoric called it the best wine in Italy. Ernest Hemingway described it as "a dry red wine, as friendly as the house of your brother."
