Vineyard and terroir
Mocenni 91 comes exclusively from Cabernet Sauvignon grown in Particella 91 at Mocenni Estate in the Chianti Classico area of Tuscany. The approximately 20-year-old vines stand at about 500 m above sea level on Alberese and Galestro soils and are trained to spur-pruned cordon and Guyot.
Grapes
100% Cabernet Sauvignon.
Vinification
The clusters are selected carefully and precisely before being harvested by hand. The grapes are destemmed and gently pressed, then fermented in stainless-steel vats at a controlled 28–30°C. Maceration lasts about 20 days.
Ageing
Shortly after alcoholic fermentation, the wine is transferred to French oak barriques, where malolactic fermentation takes place. It matures in barriques for about 24 months and receives further cellar refinement after bottling before release.
Tasting profile
Dark garnet red. The intense bouquet presents coffee, hazelnut, incense and liquorice. The substantial tannin structure is balanced by good acidity and suited to extended ageing. The finish is long and persistent, with the salinity and minerality associated with its terrain.
Serving and pairing
Serve at 18°C after opening the bottle at least one hour beforehand. Traditional pairings include fresh or cured red meat, game and mature cheeses. Store the bottle horizontally at 15–17°C away from light.
Label / history
Its numerical name identifies Particella 91, the vineyard parcel that supplies the Cabernet Sauvignon. The wine is conceived as a site-specific expression of this variety within the Chianti Classico territory.
