Vineyard and terroir
Calidonia draws its Sangiovese from Vigna della signora Chiara, Finocchi and Perone at Mocenni Estate in the Chianti Classico area of Tuscany. The approximately 25-year-old vines grow at about 450 m above sea level in Alberese and Galestro soils and are trained to spur-pruned cordon and Guyot.
Grapes
100% Sangiovese.
Vinification
Following careful cluster selection, the grapes are harvested by hand, destemmed and gently pressed. Fermentation takes place in stainless-steel vats at a controlled 28–30°C. Maceration lasts approximately 18–20 days.
Ageing
Shortly after alcoholic fermentation, the wine is transferred into 42-hl oak barrels, where malolactic fermentation takes place. It matures in oak for about 18 months, followed by further cellar refinement after estate bottling.
Tasting profile
Intense ruby red. The nose combines fruit and flowers with spice and incense. The palate is soft, elegant and well structured, with freshness, complexity and graceful, silky tannins. Vibrancy carries through a long, persistent aftertaste.
Serving and pairing
Serve at 18°C and open at least one hour beforehand. Pair with roast or cured red meat, game, mature cheeses and Mediterranean first courses. Store horizontally at 15–17°C away from light.
Label / history
Calidonia is dedicated to Calidonia Sergardi, whose marriage to Girolamo Bindi united the two families. The wine expresses gratitude to the family’s past and to those who established its roots.
