Vineyard and terroir
Benuara comes from hillside vineyards at Tenuta Presti e Pegni in Monreale, in the province of Palermo, at 300 m above sea level. The site receives sunlight from dawn until sunset. Nero d’Avola is planted with a southern exposure and Syrah with a south-eastern exposure. Planting density is 5,000 vines per hectare and the yield is 55 hl/ha.
Grapes
Predominantly Syrah with Nero d’Avola; exact proportions are not specified. The blend brings together Syrah’s complexity and the power of Nero d’Avola.
Vinification
Harvesting is manual, with the fruit placed in crates. Syrah is picked in late August. The grapes are destemmed and undergo a two-day cold skin maceration at 7°C. Fermentation follows at 26–28°C with frequent pump-overs and punch-downs. Malolactic fermentation takes place in stainless steel.
Ageing
After malolactic fermentation, 80% of the wine matures in stainless steel and 20% in 20-hl casks.
