Vineyard and terroir
Noà comes from Vigneto Sotto Le Case, the parcel below the buildings of Tenuta Presti e Pegni at Monreale in the province of Palermo. Its old vines grow at 300 m above sea level on loam-clay soils. Average vineyard age is 20 years, with 5,000 vines planted per hectare and a yield of 50 hl/ha. Nero d’Avola faces south, Merlot south-east, and Cabernet Sauvignon south to south-east.
Grapes
40% Nero d’Avola, 30% Merlot and 30% Cabernet Sauvignon. The wine combines the power of Nero d’Avola with the softer character of the two Bordeaux varieties.
Vinification
The grapes are harvested by hand into crates during the first ten days of September. After destemming, fermentation takes place under temperature control at 28–30°C for 10–15 days. Malolactic fermentation is carried out in oak carati.
Ageing
The wine remains for 12 months in the same oak carati, followed by further maturation in bottle. Oak ageing rounds the Nero d’Avola and supports the complexity developed by Merlot and Cabernet Sauvignon on the estate’s loam-clay soils.
