Vineyard and terroir
The Vermentino grows in north-east-facing vineyards at 400 metres above sea level, on sandy, chalky soils.
Vinification
The grapes are harvested by hand in mid-September and placed in small 18 kg crates. Before fermentation, they undergo four hours of cold maceration at 5 °C.
Ageing
The wine rests on its lees in steel tanks, followed by three months of maturation in bottle.
