Grapes
Pinot Blanc forms the base of the blend, contributing acidity and freshness. Chardonnay brings softness, while Sauvignon Blanc gives the aroma its distinctive character.
Vinification
The grapes are harvested by hand and fermented slowly in 30 hl oak barrels at controlled temperatures. Chardonnay and Pinot Blanc undergo partial malolactic fermentation; Sauvignon Blanc does not.
Ageing
All three components mature on the lees for one year, with 50% aged in large oak barrels and barriques also used. They are blended three months before bottling.
