The grapes grow in the winery’s vineyards at 350 metres above sea level on 23-year-old vines.
Vinification
The grapes are usually harvested by hand in mid-September at optimal ripeness. They are destemmed and gently pressed, then fermented with local yeasts in temperature-controlled stainless-steel tanks.
