Vineyard and terroir
The wine is associated with Tolaini’s San Giovanni vineyard near the town of San Giovanni a Cerreto in Chianti Classico, Tuscany. Its sandy tufa soil contains a small proportion of stones. Planting was completed by spring 2000, with densities ranging from 6,900 to 11,000 vines per hectare. The vineyards are certified organic, and the estate identifies its activity as carbon neutral.
Grapes
50% Cabernet Sauvignon and 50% Cabernet Franc.
Vinification
The fruit is selected in the vineyard and then again with an optical sorter at the winery. After destemming, the intact berries are transferred immediately to French-oak fermenters. Temperature-controlled fermentation includes 25 days of maceration.
Ageing
Maturation lasts 16 months in French-oak barriques, with 6 months on the fine lees. The wine is bottled without filtration, and natural sediment may therefore develop.
Tasting profile
Youthful aromas of dark fruit, berries and cassis combine with pronounced French-oak spice. The full-bodied palate offers deep yet restrained fruit framed by rich oak. Fruit intensity and fine tannins remain balanced, giving the wine the structure for cellaring.
Label / history
San Giovanni vineyard takes its name from nearby San Giovanni a Cerreto. A painting by Rutilio Manetti in the church beside the vineyard portrays Saint John the Evangelist offering Mary a chalice with a serpent. This international symbol of Saint John was adopted for the label to honor the historic land bearing his name.
