Vineyard and terroir

The Negroamaro grows in a vineyard in Salento. The coastal maritime climate and sharp temperature changes help the grapes keep bright acidity.

Vinification

The grapes are harvested by hand and gently pressed. The must is cooled to 12 °C so that it clarifies naturally. Fermentation takes place in stainless steel tanks under strict temperature control at 16 °C, to preserve the natural aromas of the grapes.

Ageing

The wine is aged on its lees in the same stainless steel tanks, which gives a creamy texture while keeping the flavours fresh.

Tasting profile

A colour reminiscent of a sunset over the sea. The aroma is lively and fruity, with an expressive mineral and citrus character. Notes of sea salt, citrus and tropical fruit come with a pleasant acidity. Fresh and delicate, with a creamy texture from the lees.

Serving and pairing

Suited to an aperitif on a summer day.
