Vineyard and terroir
The grapes are grown at the Masseria Maime estate, in Upper Salento near the town of San Pietro Vernotico. Puglia lies at the southern tip of Italy, bordered by the Adriatic Sea to the east and the Gulf of Taranto and the Ionian Sea to the south, and sheltered by the Apennines to the west. These features create a distinctive but fairly challenging climate.
Vinification
The Primitivo is harvested slightly overripe, in late August or early September. After crushing, the grapes macerate on their skins for around 13 days in stainless steel tanks, with gentle pump-overs and délestage. Fermentation is temperature-controlled, at no more than 28 °C.
Ageing
The wine goes into French and Hungarian oak barriques (80%) and tonneaux (20%), where it undergoes malolactic fermentation and ages for around 10 months. After bottling it matures a further 8 months before release.
Label / history
Torcicoda is a modern take on Primitivo. It was the first wine from Puglia to appear in Wine Spectator's "Top 100".
