Vineyard and terroir
The vineyards lie in Upper Salento, sloping towards the coast. The vines grow in limestone soils and receive generous sunshine, moderated by fresh Adriatic breezes. These conditions bring ripeness and energy to the grapes.
Vinification
After harvest, the grapes are gently pressed. Fermentation takes place at a controlled temperature of 26–28 °C, followed by 15–18 days of maceration with gentle pump-overs to extract deep colour and refined tannins.
Ageing
The wine matures for approximately 11 months. Seventy per cent is aged in 500-litre barrels to preserve fresh fruit character; the remaining 30% rests in traditional French oak barrels, contributing complexity and spicy notes.
Vintage notes
In 2023, a mild, rainy spring delayed vine development while building moisture reserves in the soil. The summer was dry, but these reserves and careful vineyard work kept the vines in good condition. Sunny, dry weather and marked temperature changes during August and September led to a very late harvest on 12 and 13 October. The late picking produced a broad aromatic range, vivid floral notes and a restrained, elegant character.
