Vineyard and terroir
Meliloto comes from Rasso, Monte Tenda and Monte Crosetta, hillside sites in Fumane and San Pietro in Cariano. The soils are rich in rock fragments. Vineyards are planted at 3,000–5,000 vines per hectare and trained to Guyot, double pergola or single pergola. Yield is approximately 70 q/ha.
Grapes
Corvina, Corvinone and Rondinella.
Vinification
The grapes are harvested exclusively by hand from mid-September through October, allowing careful inspection of each bunch. Traditional vinification takes place in special truncated-conical vessels. The wine remains on the skins for 15 days, and a portion of the first press fractions is incorporated.
Ageing
The wine matures in wood and then spends several months in bottle before release.
Technical data
For the published 2021 release: 12% alcohol, total acidity of 6.12 g/L and residual sugar of 159.32 g/L. The page also references a 0.5 L bottle.
Tasting profile
Intense ruby red with violet reflections. Aromas evoke red woodland berries, marasca cherry preserve and chocolate, with a coffee nuance. The palate is balanced, savoury and spicy, with a distinctly enveloping character.
Vintage notes
The vintages presented are 2000 and 2021. Meliloto is produced only in the best years. The estate describes Recioto as its traditional sweet wine for celebrations and special occasions; grapes destined for it undergo at least 120 days of appassimento.
