Vineyard and terroir
The grapes grow at the Iore estate in the commune of San Pancrazio Salentino. The vineyards cover 30 ha, with northern and southern exposures, and the vines are more than 70 years old. The soils are limestone and clay. The mild, low-rainfall microclimate is moderated by refreshing sea breezes and marked day-to-night temperature differences, encouraging intense aromas and distinctive fruit flavours in the grapes.
Vinification
Harvest usually takes place in the middle ten days of September, partly by hand and partly by machine. Fermentation proceeds at a controlled temperature for 7–10 days, followed by a short post-fermentation maceration and malolactic fermentation.
Ageing
The wine initially rests in stainless-steel tanks, followed by 6–8 months in 50-hectolitre Slavonian oak barrels and approximately 12 months in concrete tanks. It then matures in bottle for a further 6–8 months in the winery’s cellars.
