Vineyard and terroir
The Primitivo grapes come from Vallone’s vineyards in Salento. The vines grow in a mild microclimate on 20 ha of limestone and clay soils, with northeastern and southwestern exposures. The vineyards extend across hillsides along the Adriatic coast.
Vinification
Harvest usually takes place from late August through the first ten days of September, partly by hand and partly by machine. The grapes are gently destemmed and pressed. Fermentation and post-fermentation maceration take place in temperature-controlled stainless steel tanks for 15 days. After malolactic fermentation, the wine settles at low temperature in concrete tanks and is gently filtered before bottling.
Ageing
After bottling, the wine rests in the winery’s cellar for one month.
Tasting profile
Dark red with purple highlights. The aroma is intense and complex, while the palate is notably juicy, balanced and smooth.
Label / history
“Versante” means “slope” in Italian and refers to the position of Vallone’s vineyards on hillsides along the Adriatic coast.
