Vineyard and terroir
The grapes are grown on hills northwest of Verona.
Grapes
Corvina is the principal component of the traditional blend and accounts for no more than 75%. Rondinella may account for up to 35%, while Molinara contributes additional tannins and fresh acidity. The precise proportions are chosen by the producer according to its preferences and regional winemaking traditions.
Vinification
After harvest, the grapes are destemmed and pressed. Maceration lasts six days, followed by fermentation at a controlled temperature of 22–28 °C.
Tasting profile
Pleasant and elegant, with a delicate, spicy character. Rondinella contributes colour, depth and body, while Molinara adds tannins and fresh acidity.
Serving and pairing
Pairs with red meat, appetisers, Italian dishes and cheeses.
