Vineyard and terroir

The grapes come from the estate in Greve in Chianti, where the soils are predominantly limestone. The vineyard yield averages 75 quintals per hectare (7.5 t/ha), and harvesting is carried out by hand.

Grapes

Sangiovese, Merlot and Trebbiano Toscano. The technical specification describes the composition more generally as Sangiovese with complementary estate-grown red and white grapes.

Vinification

Fermentation takes place at a controlled temperature of 26–28°C. The wine remains on the skins for 6–7 days, with gentle punch-downs during maceration.

Ageing

The wine matures for about eight months in medium-sized stainless-steel vessels, followed by at least three months in bottle.

Technical data

Toscana IGT red wine. Alcohol is 13.00% vol. Average annual production is 80,000 bottles, offered in 750 ml and 3 L formats. The first vintage was 2000.

Tasting profile

Ruby red with violet reflections. The bouquet has good intensity, combining fragrant red-fruit and floral notes. The palate is harmonious, rounded and balanced, with medium structure.

Serving and pairing

Serve at 15–17°C. Pair with first courses, white meat, fresh cheeses or vegetable dishes; its style also works with contemporary fusion cuisine.
