Vineyard and terroir
The estate-grown grapes come from Greve in Chianti, where limestone is the predominant soil component. Harvesting is carried out by hand from 1 to 5 October, with an average yield of 60 quintals per hectare (6 t/ha).
Grapes
95% Sangiovese and 5% complementary red grapes from the estate.
Vinification
Fermentation takes place at a controlled temperature no higher than 28°C. Maceration lasts 15–17 days, accompanied by frequent pump-overs and punch-downs.
Ageing
The wine matures for at least 24 months in small 20 hl oak barrels, followed by a minimum of six months in bottle.
Technical data
Chianti Classico Riserva DOCG. Alcohol is 14.00% vol. The first vintage was 1924, and the Riserva is made only in top vintages. Average annual production is 60,000 bottles. Available formats are 375 ml, 750 ml, 1.5 L and 3 L.
Tasting profile
Bright ruby red with subtle garnet reflections. Ripe red-fruit aromas are followed by tobacco, black pepper and sweet wood, gaining complexity and delicacy with maturity. The palate opens broad and enveloping; its tannins are well integrated with the fruit, leading to a persistent, deep finish.
Serving and pairing
Serve at 18–20°C with grilled meat, roasts or mature cheeses.
