Vineyard and terroir

Estate-grown grapes from Greve in Chianti are cultivated on predominantly limestone soils. Harvesting is by hand during the last ten days of September or the first ten days of October. Average yield is 60 quintals per hectare (6 t/ha).

Grapes

100% Sangiovese.

Vinification

Fermentation is temperature-controlled, with a maximum of 28°C. Maceration lasts 15 days and includes frequent pump-overs and punch-downs.

Ageing

The wine matures for at least 18 months in fine French-oak casks of medium capacity, ranging from 33 to 42 hl, followed by at least four months in bottle.

Technical data

Chianti Classico DOCG made with organic grapes. Alcohol is 14.00% vol. Average annual production is 120,000 bottles. Formats are 375 ml, 750 ml, 1.5 L and 3 L. The first vintage was 1924.

Tasting profile

Bright, deep ruby red. The intense bouquet combines ripe red-fruit aromas, particularly cherry and blackberry, with floral notes. The palate is harmonious, balanced, structured and savoury, showing oak nuances, fine sweet tannins and further red-fruit character.

Serving and pairing

Serve at 16–18°C with Tuscan appetizers, red meat, meat-based first courses or game.
