The fruit comes from the company’s vineyards, where the vines grow on clay soils and average 45 years of age.
Vinification
The grapes are harvested in early October at optimal ripeness. They undergo 15 days of maceration, followed by fermentation at a controlled temperature. Malolactic fermentation takes place in barriques.
Ageing
The wine matures for 12 months in French oak barrels.
