Vineyard and terroir
The vineyards lie on the Monvigliero hill in Verduno, at approximately 240 m above sea level. Their soils consist of limestone and clay. The vines are 44 years old on average and are planted at a density of 4,500 vines per hectare.
Vinification
The grapes are harvested entirely by hand at optimal ripeness. In 2019, harvesting took place on 8 October. Forty percent of the fruit is destemmed and pressed, while the remaining 60% is vinified as whole bunches. A five-day cold pre-fermentation maceration precedes fermentation in stainless-steel tanks for approximately four weeks. Malolactic fermentation takes place in wood.
Ageing
The wine ages in oak barrels for 24 months.
